This vibrant soup is packed with flavor and perfect for a weeknight meal. Made with lean ground turkey breast or ground beef, colorful vegetables, and fragrant herbs, it’s a healthy and satisfying dish. Best of all, it comes together in under an hour and freezes beautifully for busy days ahead.

 

Ingredients

  • Meat:
    • 1 1/2 lbs ground turkey breast, or ground beef
  • Spices:
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1/2 tsp chili pepper flakes
    • 1 tbsp fresh basil
    • 1 tbsp fresh thyme
    • 1 tbsp fresh oregano
    • 1/4 cup fresh parsley
  • 3 cups beef or chicken stock (homemade or canned low sodium)
  • 4 tbsp tomato paste
  • 1 can whole crushed tomatoes (can also use 2 cups fresh tomatoes)
  • 2 tbsp olive oil
  • 3 garlic cloves (can add more)
  • 1 large onion diced
  • 1 1/2 cups chopped or diced carrots
  • 1 1/2 cups chopped or diced celery
  • Can also add chopped fresh zucchini

 

  1. Sauté the vegetables: Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and garlic and cook until softened, about 5 minutes.
  2. Brown the meat: Add ground turkey or ground beef to the pot and cook, breaking it up with a spoon, until browned.
  3. Add remaining ingredients: Stir in carrots, celery, tomato paste, beef or chicken stock, crushed tomatoes, and seasonings (chili flakes, salt, pepper, oregano, basil, thyme).
  4. Simmer: Bring the soup to a simmer, then reduce heat and cook for 20-25 minutes, or until the vegetables are tender.
  5. Garnish and serve: Stir in fresh parsley and serve hot.

 

Tips:

  • For extra flavor: Add a bay leaf to the soup while simmering. Remove before serving.
